Wrapping the finished raw Doner kebab with a food grade film is one of the most important stages in production. Clingfilm is used to tightly wrap the Doner which protects the meat during the freezing process and during transportation. It also helps the Doner kebab retain the famous "elephant leg" shape.
Some polythene films are not suitable for food contact as they are made with vinyl polymers. Some of the chemicals in vinyl products can leach into the meat, resulting in potential ingestion of the chemicals. The contamination can also cause the meat on the outside of the Doner to develop a “green tinge” and shorten the shelf life of the product. We can guarantee that our Clingfilm is completely food contact and freezer safe.
We recommend that Clingfilm is stored at a temperature of 15-20°C. In very cold temperatures the film may become brittle and easily tear.
Lay flat tubing is a continuous roll of heavy gauge polythene, made from virgin material and suitable for food contact.
The tubing is available in various colours and widths. Each roll usually weighs 20kg. It is a highly versatile material that is used to move the Doner meat from place to place. The meat can be filled directly into the tube and then cut to size, allowing the meat to tightly fill the tube. Different colour tubing can be used to identify different varieties of kebab.
Lay flat tubing can be printed in one colour with a company logo or information.
Kebab stockinette is used to wrap the kebab and protect the product during transportation. Kebab stockinette is typically available in 5kg rolls. It is made from polyester or cotton using high quality yarns. Although the material is usually white, a coloured stripe can be added, for easy identification of different Doners.
Once the prepared meat is formed into flat patties, it is inserted onto the Doner pipe or tube. This procedure is repeated until the pipe or tube is covered with the Doner meat. Using a sharp knife, the outer edges of each pattie are shaved, until each pattie blends into each other and gives the Doner kebab that conical shape.
The Doner pipes are also suitable for Shawarma kebabs, where pieces of marinated chicken are threaded onto each skewer.
Doner kebab pipes are made from either cardboard or aluminium. They are available in different lengths and dimensions ranging from 304mm up to 838mm in length. Whilst cardboard pipes are round, aluminium pipes are either round or square. The length, shape and dimension are dependent on the size of Doner that is being produced and the Doner gyros being used.
